An engagement party has a specific pressure that other events do not. It is usually the first time both families sit down together, and the food is quietly doing a lot of diplomatic work. Get it right and the evening is warm. Get it wrong and someone remembers.

Budget

For a proper hot spread, plan 20 to 25 dollars per person. A 60-guest engagement lands you around 1,200 to 1,500 dollars. That is the honest range for real portions with two proteins, rice, sides and dessert.

Build the menu for two families, not one

This is the whole game. You are feeding two sets of relatives who may not eat the same way. The safe structure is one crowd-pleasing centrepiece, usually a biryani, one richer signature dish, one mild option, one vegetarian dish, and something fresh. Five items. Everyone finds something, nobody feels like an afterthought.

Resist the urge to order twelve dishes to impress. It does not impress. It reads as chaotic, half of it goes uneaten, and you paid for all of it.

Timing

Engagements run late and start slowly. People arrive over an hour. If you serve too early, half the room misses the hot food. Plan to serve about 60 to 90 minutes after your stated start time, and have something light out from the beginning, samosas, pakoras, chai, so nobody is standing around hungry.

Quantity

Over-order. Engagements are the event where headcount is least reliable, because families invite families. Cater for 20 percent more than confirmed and you will not regret it.

Where people go wrong

Trying to cook it themselves. You are hosting, you are being introduced to people, you are being photographed. You cannot also be in a kitchen. Cater the food and be present at your own engagement.
