Counting guests at a very large wedding
Brampton weddings can be big. When the invitation list passes 500, the hardest part of catering is not choosing the menu but deciding the number. We cater from small groups up to 1,000 guests and more, and at that scale a 10 percent miscount is 50 plates. Some ways to get the figure right:
- Count confirmed RSVPs, not invitations. Chase the missing replies a week out.
- Count children separately. Toddlers on a parent's lap rarely need a full plate; teenagers do.
- Ask each side of the family to own their own list and give you one number.
- Agree a final figure with us a few days ahead and stop adjusting it.
Splitting the order between meat and vegetarian guests
A big guest list usually includes colleagues, neighbours and family friends who don't eat meat. Rather than guessing, add a "vegetarian meal" checkbox to the RSVP. A sample split for 500:
- 420 guests on the Beef Biryani Combo at quoted for your event: $11,340. Beef biryani, whole chicken deep-fried, green-pea cashew curry, eggplant mojo, pineapple curry, maasi sambal, acharu and custard dessert.
- 80 guests on the Vegetable Biryani Combo at quoted for your event: $1,200. Vegetable biryani, eggplant mojo, pineapple curry, acharu and yogurt sambal.
- is confirmed in your event quote.
quotes each event based on menu and headcount with a 20-person minimum. Put the vegetarian line on its own table with a clear sign, so meat-eaters don't empty it first.
The hall's rules on outside food
Many banquet halls in Peel Region run their own kitchens. Some allow outside caterers with a fee, some with conditions, some not at all. Before you sign with any caterer, ask the hall whether outside food is permitted, what the charge is, whether their staff will serve it, and whether they supply chafing dishes. Get those answers in writing. Our catering is drop-off or pickup with no on-site staff, so the hall or your own team will run the buffet.
Timing a large order over 50 km
Brampton is about 50 km from our kitchen at 328 Passmore Avenue, usually 45 to 55 minutes via the 401 and the 410 or 407. A 500-guest order is a lot of trays to unload. Ask for drop-off roughly an hour before dinner so the hall can transfer everything into chafing dishes, and have four or five people ready at the loading door with carts. Name one day-of contact who is not in the wedding party.
A plan for leftovers
At a wedding this size, there will be food left. Decide before the night what happens to it:
- Bring a few cases of takeaway containers and a roll of labels.
- Assign two relatives to pack leftovers as soon as the buffet closes.
- Pack within two hours of the food being set out; anything that sat out longer should not go home with guests.
- Label each container with the dish name and date, and send it home in cooler bags.
- Reheat until steaming hot the next day, and finish within a few days.
Elders, children and the long buffet
At a 500-guest wedding, the buffet line can take a long time to move, and not everyone should stand in it. Seat grandparents and elderly relatives first and have family members bring plates to their tables. Do the same for anyone with mobility trouble. For children, prepare a few plates early with biryani and pieces of the whole chicken deep-fried, which is easy for small hands, and keep the maasi sambal and acharu at the far end of the buffet so they aren't spooned onto a child's plate by accident. Parents will thank you for a dedicated kids' table near the food.
Splitting a big event across two drop-offs
Some Brampton families hold the mehndi and the reception on back-to-back nights with overlapping guest lists. Treat them as two orders with two counts. A mehndi of 150 on the Chicken Biryani Combo 1 at roughly $20 to $30 per person (quoted on menu and headcount) is confirmed in your event quote, a much lighter spend than the reception, and it leaves the bigger menu for the main night.
Brampton wedding questions
Can we serve lamb biryani instead of beef?
We make lamb biryani, but it is not on the online menu. Call or text for a quote. The Mutton Biryani Combo at quoted for your event is another option.
Do you have an allergen list for the menu?
Our menu descriptions note key ingredients: the Beef Biryani Combo includes green-pea cashew curry with cashews, and maasi sambal made with dried fish. Ask us about anything specific.
Is your halal certification documented?
Yes. Our chicken, beef and lamb are HMA-certified halal, and documentation is available on request.
