Our chicken biryani is long-grain basmati layered with chicken that has been marinated and cooked in spice, then finished together so the rice takes on the colour and flavour of the curry. It is a big, filling plate, and one of the easiest things to feed a group with.
How we make it
The chicken is marinated first, then cooked down in onion, tomato and whole spice. We layer it with par-cooked basmati and let it steam together so every forkful of rice has flavour, not just the pieces. Served with raita to cool it off.
