1. Set the buffet in shade, never in direct afternoon sun.
2. Keep hot food hot in chafing dishes with fuel lit, and keep lids on between servings.
3. Put cold items such as yogurt sambal and mango lassi on ice or in a cooler until they go out.
4. Do not leave food sitting out for long periods. Pack leftovers and refrigerate them within two hours, sooner on a hot day.

Reducing the risk of a short tray

With a long drive, running out is the outcome to avoid, because a top-up run is not practical. Count every guest who will eat, including the photographer, DJ and anyone helping in the kitchen. Plan for children separately if your venue's guest list lumps them in. Serve rice first and meats second so portions stay even across the line. Ask your serving crew to plate the first round for elders and the head table before opening the buffet.
