Five dishes that explain the cuisine

Kottu Roti, $13

Flatbread chopped on a hot griddle with vegetables and spices, served with an egg omelette. It is loud to make and quick to eat. If you only try one thing, try this. It contains egg.

Biriyani, $12

Our Northern Sri Lankan style biryani, made with freshly ground spices, with a choice of chicken, beef, mutton or vegetable. Sri Lankan tables usually put sweet and sour sides such as pineapple curry and eggplant moju next to biryani, which is one of the first differences newcomers notice.

Paalandi, half chicken, $40

Crispy chicken cooked down in a spiced gravy with a yoghurty tang. It is a sharing dish, big enough to anchor a family table.

Puttu Mixed, $20

Steamed rice flour and coconut, served with any meat, dhal curry and coconut sambal. Break the puttu up with your fingers and work it into the curry. That is how it is meant to be eaten.

Vattalappam, $15

A steamed coconut custard sweetened with kithul jaggery and spiced with cardamom, nutmeg and cinnamon. It contains eggs and is eaten cool, so it does not mind a car ride.

A heat ladder, mildest first

Potato Milk Curry and Green Peas Curry (on request): coconut milk based and gentle.
Biriyani and Kottu Roti: warm spice, not much burn.
Chilli Chicken ($14.99) and Chilli Shrimp ($18.99): garlic, a little sweetness and a clear kick.
Chicken Devil and Beef Devil ($12.99 each): hotter, with a sweet and sour edge.
Masi Sambol (on request): fiery and crunchy, made with dried Maldives fish, so skip it if anyone avoids fish.

A Mango Lassi ($6) on the table helps anyone who climbs the ladder too fast. It contains dairy.

From Passmore Avenue to an Ajax driveway

Ajax is in Durham Region, about 27 km east of us, which is roughly 25 to 30 minutes along the 401. Pickup is on Saturday and Sunday. Order ahead on our direct ordering page, which has no app markup, or through Uber Eats. We are not on SkipTheDishes.

On a half hour drive nearly everything arrives in decent shape. Kottu is the one to eat first, because the chopped roti softens as it sits in a closed container.

Costing a 25-guest backyard party

Once you pass 20 people, a combo is easier than ordering single plates. quotes each event based on menu and headcount with a 20-person minimum. For a summer backyard party of 25, Chicken Biryani Combo 2 at roughly $20 to $30 per person (quoted on menu and headcount) covers a lot of ground: chicken biryani, deep-fried chicken, pineapple curry, eggplant mojo, acharu, maasi sambal, green-pea cashew curry and custard dessert.

25 guests x $25 = $625 before tax and delivery.

Two things to flag to your guests on that menu: the green-pea cashew curry contains cashews, and the maasi sambal contains fish. If several people are vegetarian, ask us about mixing combos. The Vegetable Biryani Combo is roughly $20 to $30 per person (quoted on menu and headcount).

Outdoors in July, set the food out of direct sun, keep hot trays over chafing dishes, and move leftovers into the fridge within two hours. We drop the food off packed and ready to serve; your family handles setup and serving, since we don't send staff.

Reading the menu like a regular

Our combo names describe the rice first. Ghee rice is rice cooked in clarified butter with whole spices, softer and richer than biryani. Samba is a small-grain rice popular in Sri Lankan and Tamil cooking, which is why Muthu Samba, Seeraga Samba and Samba Ghee Rice appear as separate combos. A devil is a stir-fried, sweet and hot chilli dish. Moju is a sweet and sour eggplant side, and acharu is a tangy pickle of fruit and vegetables. Once those five words make sense, the whole menu does.

Yes. Our chicken, beef and lamb are HMA-certified halal, and documentation is available on request.

Can I get butter chicken?

Do you make hoppers or lamprais?
