Hosting the walima in your own backyard
Some Pickering families with a deep lot choose a tent in the backyard over a rented hall for a summer walima or reception. It keeps costs down and feels personal, but it turns the host into the venue manager. This post covers what that means for the food, from a kitchen about 20 km away in north Scarborough, roughly 20 to 25 minutes east along the 401 into Durham Region.
Why biryani works so well outdoors
A backyard has no commercial kitchen, so the fewer pots you need to manage, the better. A biryani combo puts the rice and meat together in one dish, with the sides alongside. The Mutton Biryani Combo at roughly $20 to $30 per person (quoted on menu and headcount) brings mutton biryani, chicken chukka, eggplant mojo, maasi sambal, pineapple curry, yogurt sambal, acharu and ktull wattalapam. For 120 guests that is final pricing depends on your menu and headcount before tax and delivery. quotes each event based on menu and headcount with a 20-person minimum.
The backyard checklist
We drop off packed food and leave, with no staff on site. Everything else is yours to arrange:
- A tent or canopy specifically over the food tables, separate from the seating.
- Sturdy folding tables; trays of rice for 120 are heavy.
- Chafing dishes, stands, fuel and a lighter, plus spare fuel cans.
- Serving spoons, one per dish, and a few extras for when one drops in the grass.
- A hand-washing station or sanitizer at the start of the line.
- Large bins with lids, so the garbage doesn't attract wasps by evening.
- Coolers with ice for dairy items like yogurt sambal and for drinks.
Summer heat and cooked food
July and August afternoons in Durham can be hot and humid. Keep the food table out of direct sun, keep lids on between servings, and start the two-hour clock when the food comes out. After two hours, leftovers go into a fridge or are thrown away. If your fridge is already full of wedding sweets, borrow space from a neighbour or bring in an extra cooler with plenty of ice for the yogurt dishes.
A rain plan you decide in advance
Pick your backup before the forecast forces it. If it rains, where does the buffet go: the garage, the basement, the main floor? Clear that space the day before so a sudden shower doesn't mean carrying hot trays through a crowd. A tent with sides is worth the extra rental cost in an unsettled week.
Driveways, street parking and the neighbours
A backyard event with 120 guests fills a residential street fast. Keep the driveway or the curb in front of the house clear for the food drop-off, and tell us whether the driver should come to the front door or the side gate. A note to the neighbours a week ahead goes a long way, especially if guests will park on their side of the street.
A plate for the children
Kids at a backyard walima are running around, and they won't sit for a spicy curry. Set aside a few plates with biryani rice and chicken chukka, and keep the maasi sambal away from the kids' end of the table. Ask us about adding a small tray of something gentle, such as potato milk curry, on request.
The smaller events can be picked up
Because Pickering is close, a family member can collect food for the mehndi or a small dholki themselves. Pickup from our kitchen runs on Saturday and Sunday. For 30 guests on the Chicken Biryani Combo 1 at roughly $20 to $30 per person (quoted on menu and headcount), is confirmed in your event quote.
After sunset: light and insects
A summer reception often runs past dark. String lights over the seating are lovely, but the food table needs proper light so people can see what they are spooning onto a plate. Clip-on work lights or lanterns at each end of the buffet do the job. Evening also brings mosquitoes and moths. Mesh food covers over open trays, lids on chafing dishes between servings, and a citronella candle or two kept well away from the fuel cans make the second round of plates more pleasant than the first.
