Choosing a combo for a 300-guest reception
Large banquet halls are common for Vaughan weddings, and with a room of 300 the menu choice carries real weight, both in cost and in what guests remember. Our higher-end ghee rice combos sit within a few dollars of each other, so the decision comes down to what is on the plate. Here are four side by side.
Saffron Ghee Rice Combo, roughly $20 to $30 per person (quoted on menu and headcount)
Saffron ghee rice, boneless mutton devil, fried whole chicken, mango curry, eggplant mojo, dhal curry, maasi sambal, acharu and ktull wattalapam. A balanced plate with one spicy meat, one milder one, and a sweet mango curry.
Seeraga Samba Ghee Rice Combo, roughly $20 to $30 per person (quoted on menu and headcount)
Seeraga samba ghee rice, hot beef bisteak, beef sambal, pineapple curry, capsicum hot curry, eggplant plantain milk curry, potato devil, green-pea cashew curry and ktull wattalapam. Beef-forward, with the most vegetable sides of the four. Note the cashews.
Ghee Rice Combo 4, roughly $20 to $30 per person (quoted on menu and headcount)
Ghee rice, whole chicken korma, deep-fried Bengal masala beef, kaliya, pineapple curry, acharu, capsicum and ktull wattalapam. Korma is the gentler choice for older guests.
Blessed Ghee Rice Combo, roughly $20 to $30 per person (quoted on menu and headcount)
Blessed ghee rice, jumbo tiger shrimp devil, dry-fried fish, potato milk curry, eggplant milk curry, capsicum hot curry and dessert. Seafood instead of red meat, for families who prefer it.
What 300 guests costs on each
- Ghee Rice Combo 4: final pricing depends on your menu and headcount
- Saffron or Blessed: final pricing depends on your menu and headcount
- Seeraga Samba: final pricing depends on your menu and headcount
All before tax and delivery. The gap between the cheapest and the most expensive is $600 at this size, so pick on the menu, not the price. quotes each event based on menu and headcount with a 20-person minimum; ask us about mixing combos if you want two on the same night.
Matching the plate to your guest list
If the room leans toward elders and young children, Ghee Rice Combo 4's korma will be eaten more widely than a devil. A crowd that expects bold heat will appreciate the Seeraga Samba's hot beef bisteak and capsicum hot curry. If many guests avoid red meat, the Blessed combo is the obvious fit. When guests are a mix of Sri Lankan families and friends from other backgrounds, the Saffron combo's mango curry tends to be an easy introduction.
Settle these with the hall first
Vaughan is about 35 km from our Scarborough kitchen, 35 to 40 minutes via the 407 or the 401, so a missed detail can't be fixed with a quick second trip. Ask the venue:
- Is outside catering allowed, and is there a fee for it?
- Where does the delivery unload, and from what time?
- Does the hall supply chafing dishes and buffet tables?
- Will hall staff serve, or do you need your own team? We don't send servers.
- Is there a warming area where food can wait if dinner runs late?
When dinner runs late
Receptions in big halls often slip behind the program: speeches run over, photos take longer. Give us the time dinner will realistically be announced, not the time printed on the card. Once the food is in the hall, it should go into chafing dishes with fuel lit, and leftovers go into a fridge within two hours of being set out.
Dessert and the second wave
Three of the four combos above end with ktull wattalapam, and the Blessed combo includes dessert. At a reception that runs late, set dessert out after the main buffet closes rather than alongside it, so it doesn't get buried under rice. Guests who arrive late or step out for photos often come back hungry once the speeches finish, which is why it pays to keep one sealed tray of rice and one of the main meat in reserve rather than opening everything at the start. Bring it out for that second wave, and the people who missed the first round still eat properly.
One last practical point: give the hall manager our number and give us theirs, so the two of us can sort out unloading directly on the day without pulling you away from the reception. You should be with your guests, not on the phone about loading doors.
Vaughan reception questions
Can we add butter chicken for the children's table?
Yes, we make butter chicken. It isn't on the online menu, so call or text to add it to your quote.
How far ahead should we book a 300-guest date?
As early as you can once the hall is confirmed, especially in wedding season.
