A family party that comes across the 407

Vaughan is in York Region, about 35 km from our kitchen at 328 Passmore Avenue in north Scarborough. Depending on the 401 or the 407, the drive takes roughly 35 to 40 minutes. For a party, that distance shapes two decisions: how early you book, and what time you set for the drop-off. We would rather arrive a little before your guests than in the middle of the first round of greetings, so tell us the time people are invited for, not the time you hope to eat.

Many Vaughan family parties are held at home, often downstairs in a finished basement, or in a rented community room. Both suit the way we work, because our catering is drop-off or pickup only. Trays come packed and ready to serve, and your family handles setup and serving. There are no servers or cooking stations, which keeps the bill lower and the evening relaxed.

Getting trays down to the basement

It sounds minor until the driver is at the door with a stack of full trays. A few things help:

• Clear a path from the front door to the stairs, including the pile of shoes and coats.
• Have two people ready to carry, one tray at a time, both hands on it.
• Set up the serving table before we arrive, with chafing dishes and fuel in place but not yet lit.
• For a community room, check what time you get the keys and whether there is a side or loading door closer to the room.

Two Vaughan budgets, worked out

Each combo is priced per person with a 20-person minimum. Here is how the numbers look for two common party sizes, before tax and delivery:

• 30 guests on Chicken Biryani Combo 2 at $25: 30 x $25 = $750. That covers chicken biryani, deep-fried chicken, pineapple curry, eggplant moju, acharu, maasi sambol, green-pea cashew curry and custard dessert.
• 60 guests on Chicken Biryani Combo 1 at $20: 60 x $20 = $1,200. A simpler spread of chicken biryani, eggplant moju, egg masala and acharu, which suits a bigger crowd where most people go back for more biryani.

Label the buffet for relatives new to Sri Lankan food

At a big family gathering, not everyone knows what is in each tray. Married-in relatives, neighbours and children's friends all end up asking the host the same question. A small folded card beside each dish saves you a lot of that. Write three things on each card: the dish name, hot or mild, and any allergen worth knowing.

From our menu descriptions, the ones to flag are egg in the egg masala, cashews in the green-pea cashew curry and dried Maldives fish in the maasi sambol. Yogurt sambal, where a combo includes it, contains dairy. If anyone avoids eggs, ask us about the dessert before the day.

Hot or mild matters as much. In general the maasi sambol brings the most heat, while pineapple curry and eggplant moju lean sweet and sour. Grandparents and small children often head straight for biryani and fried chicken, and the cards help them find the gentler sides too.
