If you have never had Sri Lankan devil, it is the dish that converts people. Meat or seafood wok-tossed with onions, peppers and a dark, spicy sauce until the edges catch and everything goes glossy and hot. It is bold, a little smoky, and properly spicy in the best way.

Allergy notes

Some of our dishes contain egg (kottu, egg masala, watalappan), dairy (yogurt sambal), fish (maasi sambal is made with dried Maldives fish) and nuts (green pea cashew curry). If anyone has an allergy, tell us when you order and we will tell you what to avoid.

Why it is called devil

"Devilled" was an old English word for food cooked with a lot of pepper or hot spice. In Sri Lanka the word stuck and became its own style: meat or seafood fried, then tossed in a hot pan with onion, capsicum, chilli and a sweet, tangy sauce. It is a favourite "bite" in Sri Lanka, the plate that sits in the middle of the table at gatherings for everyone to pick from.

Devil, chilli or curry?

• Devil: dry to semi-dry, glossy, with onion and capsicum. Spicy and a little sweet. Eaten as a side or with rice.
• Chilli (Chilli Chicken, Chilli Shrimp): crispy first, then coated in a spicy garlic sauce. More crunch than a devil.
• Curry: cooked slowly in a gravy, often with coconut milk. Made to be poured over rice.

For a dinner at home, Chicken Devil ($12.99) is the easy pick. Beef Devil ($12.99) and Boneless Mutton Devil ($14.99) are listed with a 10+ minimum, and the seafood and quail devils are group orders priced on request.

Cooling the heat
