Choosing dishes when there is no kitchen nearby

Outdoors, there is no oven to fall back on. Lean on dishes that stay pleasant to eat as they cool, such as fried chicken, biryani and acharu. Saucy curries suit a backyard better, where you can keep a chafing dish going and carry trays back into the house. Whatever the setting, a few small things make a big difference: one serving spoon per tray, a roll of paper towels, wet wipes, and a garbage bag tied to each table.
