Chilli chicken is the dish that disappears first at the table. Boneless chicken fried until crisp, then tossed hot with onions, green chillies and bell peppers in a glossy, savoury sauce with a real kick. It is the Sri Lankan take on the Indo-Chinese classic, and ours leans into the heat and the wok flavour instead of drowning it in sweetness.

The trick is the toss. The chicken has to hit the sauce hot so the coating stays crisp at the edges while it soaks up flavour. Done right, you get crunch, heat and that smoky wok note in the same bite.

Chilli chicken vs chilli shrimp

Chilli Chicken ($14.99) is boneless, crispy chicken in a spicy garlic sauce. Chilli Shrimp ($18.99) uses jumbo shrimp in a spicy-sweet garlic sauce. Both go with fried rice ($20 to $23) or noodles ($15). For groups, chilli chicken trays are a party favourite.

Allergy notes

Some of our dishes contain egg (kottu, egg masala, watalappan), dairy (yogurt sambal), fish (maasi sambal is made with dried Maldives fish) and nuts (green pea cashew curry). If anyone has an allergy, tell us when you order and we will tell you what to avoid.

Keeping the crunch

A crisp coating and a hot sauce start working against each other the moment the lid goes on. A few habits help:

• Open the container as soon as it arrives so the steam can escape.
• Eat it first, before the rice or biryani.
• Reheat leftovers in an oven or air fryer for a few minutes. The microwave makes the coating soft.
• Store it in a container with the lid slightly open until it cools, then close it and refrigerate.

If the heat is too much

Chilli chicken has a real kick. A Mango Lassi ($6) is the quickest fix, since yogurt calms chilli better than water. Plain rice or the egg omelette that comes with our Kottu Roti ($13) also softens each bite.
