A backyard full of people in July
Summer in Pickering means backyard parties: a graduation, a family reunion, an Eid gathering that spills onto the lawn, or a long-weekend barbecue where someone suggests skipping the grill this year. Sri Lankan rice and curry works well outdoors, but heat, sun and long afternoons change the way you should handle the food. This post covers that, plus how to plan when a good share of your guests are vegetarian.
Where to put the food table
The spot you choose matters more than people think.
- Put the serving table in full shade, ideally under a covered deck, a canopy or right next to the house wall.
- Keep it away from the barbecue, the kids' play area and the path to the washroom.
- Run an extension cord early if you plan to use electric warmers.
- Set the drinks somewhere else entirely so the line for water does not block the line for food.
- Have mesh food covers or lids ready. Wasps and flies find curry quickly.
Hot days and the two-hour rule
General food-safety advice says perishable food should not sit out for more than two hours, and on a very hot day, less than that. Outdoors in July, follow it strictly:
- Keep hot dishes in chafing dishes with lids on between servings.
- Bring out food in rounds rather than all at once, so the second half of the rice stays covered and protected.
- Keep yogurt sambal and anything dairy-based cool, in the shade, and do not leave it out all afternoon.
- Refrigerate leftovers within two hours of serving, and sooner on hot days.
- Throw out anything that has been sitting in the sun.
Our food arrives packed and ready to serve. What happens after that depends on your setup, so think about shade and fridge space before the day.
Planning for a big vegetarian group
Many family gatherings now include a sizeable vegetarian group, whether for religious, health or personal reasons. Sri Lankan food is a comfortable fit because so many of the sides are vegetable dishes already.
- Vegetable Biryani Combo, quoted for your event: vegetable biryani, eggplant mojo, pineapple curry, acharu and yogurt sambal. No meat, and no maasi sambol (which contains dried fish).
- Green Peas Curry: on request, described on our menu as naturally vegan, cooked in coconut milk with curry leaves and pandan.
- Potato Milk Curry: on request, mild and made with coconut milk.
Yogurt sambal contains dairy, so mention that if you have vegan guests. Our page on vegetarian Sri Lankan dishes has more ideas.
Fifty guests, split down the middle
quotes each event based on menu and headcount with a 20-person minimum. For a party where half the crowd is vegetarian:
- 25 guests on the Vegetable Biryani Combo: final pricing depends on your menu and headcount
- 25 guests on Chicken Biryani Combo 1 (chicken biryani, eggplant mojo, egg masala, acharu): final pricing depends on your menu and headcount
is confirmed in your event quote. Both groups clear the 20-person minimum on their own. If you want to adjust the split further, ask us about mixing combos.
What else to have on hand
- Heavy-duty plates. Rice and curry is heavier than burgers, and flimsy plates fold.
- Plenty of napkins and a hand-washing station or wipes, since some guests will eat with their hands.
- Two or three bins for garbage and recycling near the food, not at the far end of the yard.
- Cold water and something like mango lassi, $6 on our menu, for anyone who finds the food spicy.
Getting it to the backyard
Pickering is about 20 km from our kitchen, roughly 20 to 25 minutes. For a house party, tell us whether trays should come to the front door, the side gate or the garage, and whether there is room to park in the driveway. Since we do drop-off only, with no on-site staff, have someone watching for the delivery so trays go straight to the shade instead of waiting on the porch. More about our service area is on the Pickering catering page.
Backyard party questions
Can you set up the buffet for us?
No. Our catering is drop-off or pickup, and the food comes ready to serve. You handle setup and serving.
Do you do smaller backyard orders?
Yes. Trays come in small (5 to 8), medium (10 to 15) and large (20 to 30). Ask for a quote, or see party catering in Pickering.
What if a guest asks about halal certification?
Our chicken, beef and lamb are HMA-certified halal. Documentation is available on request. Call (647) 449-2924 with any questions.
