An egg hopper, or appa, is a bowl-shaped pancake with an egg cooked right into the middle. The batter is rice flour and coconut milk, left to ferment so it turns slightly sour and airy. Poured into a small curved pan, it sets with a soft, spongy centre and a thin, crisp, lacy edge. Crack an egg in while it cooks and you get the classic egg hopper.
What makes a good egg hopper
It comes down to the batter and the pan. We ferment ours so it has that faint tang and the right lift, then cook each hopper to order so the edges stay crisp instead of going soft on the plate. Eat it with lunu miris or a curry and you have a proper Sri Lankan breakfast, any time of day.
How we serve them
Hoppers are best fresh off the pan, so they are a weekend, made-to-order item. Pair them with our curries or sambols. Everything is zabihah halal.
How to get it
Hoppers are best eaten fresh, so weekend pickup gets you them at their crispest. We are a weekend kitchen, so pickup is from our Scarborough location on Saturday and Sunday, 12 to 5. If you are inside our Uber Eats delivery range, we can also drop it at your door.
